Here is a little bottle we are saving for a nice dinner this weekend. A nice 2009 California Red Wine from Orin Swift Cellars in Napa. They are the same people who brought us such delicious wines as the Prisoner.

Sushi
Last night we hit Toshi Sushi in Little Tokyo in Downtown LA. Fish was fresh and tasty. Got sashimi because we like our fish for fish. We don’t need no stinking rice with that. The Tuna and Salmon were absolutely fantastic. They made us a spicy yellowtail handroll and a spicy scallop cut roll. They were done simply and tasty. What more could you ask for??? Also had some delicious sake and beer.

Christmas Turkey
Here is our smoked turkey from Christmas.
It Is a 14 Pound Heritage Turkey. Salt Brined it for 26 hours in the fridge. Pulled it out, let her warm up a little. Wiped off the excess salt. Made a simple rub of Salt, Pepper, Paprika, and a good Cajun mix. I usually see what looks the best at the market. I was up in the mountains so was away from the OTC test kitchen and my secret spice rack. But a nice Cajun mix is usually an easy way to add some flavor. Put it over the rack with some really good
